An alternative to ketchup is the homemade tomato sauce - a sauce prepared using a simplified technology. It is based on mashed tomatoes, with various options for vegetable additives. In order to spice up the homemade sauce, various types of peppers, garlic, basil, parsley, thyme, cilantro are put into the blanks.
General rules for making sauce
There is no strict recipe. When preparing ketchup at home, you should follow the rules for preparing vegetables and the time of their heat treatment. To prepare this recipe you will need:
- ripe tomatoes - 2.5 kg;
- apples - 500 g;
- sweet pepper - 500 g;
- carrots - 500 g;
- hot peppers - 2 pcs;
- garlic - 200 g;
- salt - 50 g;
- granulated sugar - 1 glass;
- refined vegetable oil - 1 cup;
- vinegar essence 6% - 140 g.
Peeled vegetables are chopped in a fine mesh meat grinder. Put on fire and extinguish for about two hours. Hot pepper, granulated sugar are added to the boiled mass.
After 35-40 minutes, the salad mass is seasoned with garlic, salt and vinegar. The finished product is laid out in sterile jars and hermetically sealed. It turns out a spicy, sweet and sour taste of the snack.
